Course Overview

This qualification will develop your knowledge, understanding and skills to work in a professional cooking environment. Specifically you will learn how to maintain the health, hygiene, safety and security of the working environment and develop productive working relationships with colleagues. You will also learn how to maintain food safety when storing, preparing and cooking food.

All practical lessons will take place in our state of the art, industry standard kitchens and restaurant. You will also take part in front of house service as well as back of house cooking. Throughout the course you will have the opportunity to compete in regional, national and international cookery competitions.

Areas of study include: Core Units Develop productive working relationships with colleagues Maintain the health, hygiene, safety and security of the working environment Prepare poultry for complex dishes Cook and finish complex game dishes Prepare, cook and finish complex hot sauces Ensure food safety practices are followed in the preparation and serving of food and drink
Prepare, cook and finish complex bread and dough products Produce sauces, fillings and coatings for complex desserts Prepare fish for complex dishes Prepare, cook and finish complex soups Contribute to the control of resources Prepare, finish and present canaps and cocktail products Contribute to the development of recipes and menus
